Ingredients
- 6 large waxy potatoes
- 1 head garlic, separated into cloves but not peeled
- 1 bunch rosemary, leaves only, finely chopped
- 1/4 cup extra virgin olive oil
- salt and pepper
Preparation
Step 1
Preheat oven to 425. Bring a large pot of salted water to boil. Cut potatoes into 1" cubes and blanch in boiling water for 2 minutes.
Put potatoes on a baking sheet and toss with garlic, rosemary, and oil. Season with salt and pepper and spread around the sheet. Bake or 30 minutes and golden brown.
