Crockpot Baby Lima Beans With Ham

This is an easy, basic lima bean dish with ham, onion, and seasonings. These are delicious with cornbread or serve as part of a big meal.
Ingredients
- 1 pound dried baby lima beans
- 2 quarts water for soaking
- 2 medium onions, coarsely chopped
- 1 meaty ham bone plus leftover diced ham, as desired
- 3-4 cups water, to cover
- 1 teaspoon Cajun or Creole seasoning blend
- 1/4 teaspoon freshly ground black pepper
- 1 dash cayenne pepper
- Salt, to taste
Preparation
Step 1
Soak the lima beans overnight. Drain and put lima beans in the slow cooker insert. Add 3 to 4 cups of fresh water just to cover the beans and stir in the chopped onions and add the ham bone and ham. Cover and cook on HIGH for 3 hours. Add the Creole seasoning, and black and cayenne peppers. Cover and cook on LOW for 4 hours, or until very tender. Serves 8.

Best ham and lima beans I've ever made! We've done this recipe several times in the last few months. It's absolutely delicious. We're rather generous with the amount of ham that's used. We've been making it with the Cajun seasoning, and usually it's with a honey ham. I'm a big fan of salt and eat way too much of it, but I didn't even bother adding any salt to this recipe. The ham is plenty salty and it's quite tasty without any extra."
Big Hit.. or should I say Pig hit? I made this dish today in the slow cooker and it turned out absolutely fabulous! It was VERY easy and the whole family had seconds and thirds! I made a 7 quart slow cooker full and there aren't a lot of leftovers for a cooker that size. I think getting 8 serving out of the recipe is questionable unless it is used as a side dish. I made 2.5 times the recipe and it would probably serve 8 as a main course.I did change a couple of things. I slow cooked on low for 10 hours instead of high for 3 and low for 4 (we have a very nice slow cooker but I don't think it can be set to change from high to low on it's own and I am not home during the day). I also added some garlic salt and a touch of pepper sauce for a bit of extra flavor. I also used a honey baked ham bone rather than a plain ham. I will definitely make this again!
