Ingredients
- 2 Tbsp. minced fresh cilantro
- 1 Tbsp. minced fresh oregano
- 1 1/2 tea. minced garlic
- 1 tea. smoked paprika
- 1 large lime, zested and juiced
- 4 Tbsp. prepared honey mustard dressing
- 2 Tbsp. tequila
- 4 lb. roasting chicken
Preparation
Step 1
Heat grill for indirect cooking. Place a drip pan in the bottom of the cooler side of the grill.
In a bowl, combine cilantro, oregano, garlic, paprika and 2 tea. lime zest; season to taste with salt and pepper. In a separate bowl, mix 2 Tbsp. lime juice, honey-mustard dressing, tequila and 1/2 herb mixture. Gently loosen skin; spread remaining herb mixture under skin. Brush outside of chicken with 1/2 dressing mixture.
Place chicken on grill over drip pan. Cover; grill 1 hour, 15 minutes or until temp. is 175 degrees, basting occasionally with remaining dressing mixture.
Let sit 10 minutes before carving
