Ingredients
- Butter Flavored Non-Stick Spray (like Pam), for greasing
- 2 Egg Whites
- 2 TBSP Soy, Skim or Almond Milk
- 1 tsp Cinnamon, plus 1 tablespoon
- 4 slices Ezekiel, Sprout or Whole Grain
- 1 Bananas (cut into slices)
- 2 TBSP Peanut Butter
- 1 TBSP Agave Nectar for serving
Preparation
Step 1
Heat a medium size non-stick pan (or use non-stick spray) on medium heat.
In a medium bowl, beat the egg whites until frothy. Add the milk and cinnamon.
Spread 1 TBSP of peanut butter on each of two, of the four slices. Then add the sliced bananas to the slices with peanut butter. Place the remaining slices of bread on top of each peanut butter slice to make a sandwich.
Carefully dip the bread slices into the mix until just coated on both outer sides of the sandwich (do not soak, just dip to coat).
Place the sandwich in the heated pan for two minutes, carefully flip to the other side and gently press down squishing the sandwich a little. Cook until each side is golden brown.
Serve with agave or your favorite sugar free or light maple syrup and the remaining sliced bananas.
