Ingredients

  • 1 eggplant
  • 5 tbsp. mayo
  • 2 cloves garlic, crushed
  • 1 tsp. salt

Preparation

Step 1

1. Prick eggplant with fork a few times. Bake at 350 for 1 hour. Allow to cool then remove skin.
2. Pulse eggplant pulp with rest of ingredients.
