Honey mustard chicken with roasted new potatoes

Ingredients
- 4 boneless skinless chicken breasts
- salt and pepper
- 4 T Dijon mustard
- 2 T honey
- 1 minced shallot
- 1/2 t dried thyme
- 1 pound small red potatoes cut into halves
- cooking spray

Preparation
Step 1
Preheat oven to 375
sprinkle chicken with salt and pepper
place in 13x9 baking dish
combine mustard honey shallot and thyme on small bowl to form paste
spread over chicken covering completely
add potatoes to pan and spritz with olive oil spray
sprinkle potatoes with salt and pepper
bake one hour stirring potatoes once
