Go Green Raw Falafel

These turned out very good...I mean yummy yummy yummy good lol Even non-raw friends liked them so much they requested more.

They will turn out very green due to the cilantro and parsley.

I like them with a big salad or by themselves as a snack.

Ingredients

  • 1 cup dried chickpeas (soak 24 hrs rinsing 2x)
  • 1/2 cup cilantro
  • 1/4 cup parsley
  • 2 TBS evoo
  • 1 1/2 TBS cumin
  • 1 tsp sea salt
  • ½ juice of one lemon

Preparation

Step 1

In a food processor, blend all ingredients for about 30-60 seconds. Scraping the sides if necessary. Water should not be necessary. Roll mixture into small balls and place on a mesh dehydrator screen. Dehydrate at 105 degrees for 4-5 hours, longer.
