Ingredients

  • 2 lb. Sweet Potatoes
  • 1 1/2 Cups Mayonnaise
  • 2 tsp. Dijon Mustard
  • 1/4 tsp. Salt
  • 4 Hard-Boiled Eggs, chopped
  • 1 1/2 Cups Celery, finely chopped
  • 8 Green Onions, sliced

Preparation

Step 1

Place sweet potatoes in large saucepan and cover with water. Cover and cook gently until potatoes can be easily pierced with the tip of a sharp knife. Drain. When potatoes are cool, peel and dice. In a large bowl, combine mayonnaise, DiJon mustard and salt. Stir in eggs, celery and onions. Add potatoes and toss gently to coat. Cover and refrigerate 2-4 hours. Yield: 8-10 servings.
