Ingredients
- 4 TBS olive oil
- 1 clove garlic, minced
- 4 tsp chopped fresh basil
- 1 tsp kosher salt
- 4 medium tomatoes, diced
- 1 # spaghetti or bucatini
- 1/2 to 1 cup freshly grated mozzarella
- 1/2 cup grated parmesan
Preparation
Step 1
1. Cook pasta in boiling, salted waters.
2. Heat oil in medium skillet over medium heat. Add garlic and cook until tender. Stir in basil and salt. Toss in tomatoes and simmer for 15" or until they soften.
3. When pasta is done, drain and return to pot.
4. Add grated mozzarella and tomato mixture to pasta and stir gently for about 3" or until cheese melts.
5. Transfer pasta to bowls and sprinkle with parmesan.
