Chocolate Raspberry Martinis
- 1 1/3 c half and half
- 1 c semi-sweet chocolate chips
- 1 (10-oz) container frozen raspberries in syrup, thawed
- 6 oz raspberry flavored vodka, divided
- 2 c ice, divided
- Fresh raspberry and mint sprigs
Place half and half in bowl in the microwave and run uncovered on high 60-90 seconds or until it begins to simmer.
Add chocolate morsels and whisk using whisk until smooth.
Pour half of the chocolate mixture into a shaker.
Strain raspberries into a small bowl, pressing with a ladle to measure 2/3 c juice. (Discard the seeds).
Using jigger to measure, add 3 oz vodka, 1/3 c raspberry juice, and 1 c ice to the shaker.
Secure lid and shake vigorously 1-2 minutes or until ice is almost melted and mixture is smooth.
Divide martinis evenly among three martini glasses.
Pour remaining chocolate, vodka, raspberry juice, and ice into shaker, shake and serve in martini glasses. Garnish with raspberry and mint if desired. Yields 6 servings.
