Ingredients
- 2 tablespoons olive oil
- 1-pound ground beef
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 2 tomatoes, diced (you can also use 1 can of diced tomatoes)
- 2 cloves garlic, minced
- 4 cups beef or chicken stock
- salt and fresh pepper to taste-heavy on the pepper for more zip!
- 2 cups cooked long-grain white rice
Preparation
Step 1
In a large soup pot heat olive oil over medium heat and add ground beef.
Add onions, pepper, tomatoes and garlic.
Season with salt and pepper and continue to cook over medium-low heat until vegetables are tender, about 8 minutes.
Add chicken stock.
Cover and cook over low heat for 20 to 30 minutes, or until heated through.
Stir in cooked rice and serve.
