Ingredients
- 1 (5-7oz) pkg baby spinach or baby romaine
- 2 cups sliced strawberries
- 1/2 cup crumbled goat or feta cheese
- 1/4 cup pine nuts, toasted
- Balsamic Vinaigrette
- 1 Tbsp balsamic vinegar
- 1 Tbs extra virgin olive oil
- 1 Tbsp chopped fresh basil leaves or 1 tsp dried basil, crushed
- salt and pepper
Preparation
Step 1
Whisk vinegar and olive oil in small bowl. Add basil and season with salt and pepper. Combine salad and strawberries in large bowl. Add vinaigrette, gently toss to evenly coat. Divide salad among 4 plates. Sprinkle each salad with cheese and pine nuts.
