Ingredients
- 4 - 6 flour tortillas, 8 inch
- 1/2 lb. ground pork sausage
- 8-10 eggs
- 4.5 oz can chopped green chilies, undrained
- Picante sauce or salsa
- Shredded cheddar cheese
Preparation
Step 1
Heat tortillas. Brown sausage in large skillet; drain. Add chilies. Cook, without stirring, until mixture begins to set on bottom. Draw spatula across bottom of pan to form large curds. Continue cooking until eggs are thick but still moist. Spoon mixture down centers of warm tortillas. Top with picante sauce and cheese. Fold tortillas over and serve immediately.
