Bulghur Fruit Salad
This is a super-easy no-cook filling and healthful side-dish that goes well with various meats, especially roast pork. This recipe makes a quantity of salad that keeps well in the frig for several days.

Ingredients
- sauce :
- 11 ounce can mandarin oranges, drained,
- liquid reserved
- enough water added to above liquid to equal 1 cup
- 1 cup bulghur ( preferably medium or fine-grain )
- 1/3 cup minced cilantro
- 1/2 cup ( or more, depending on taste )
- halved red seedless grapes
- 1/4 cup orange juice
- 3 Tablespoons olive oil
- 1/4 teaspoon coriander
- 1/4 teaspoon cinnamon
Preparation
Step 1
Combine the mandarin oranges, and their liquid + water. Microwave at high for 2-3 minutes, till boiling. Add bulghur, cover, and let stand until liquid is absorbed, about 20 minutes. Stir in mandarin oranges and cilantro. Fold in grapes. Mix orange juice, olive oil, coriander, and cinnamon. Fold into bulghur and fruit mixture.
