Chicken Roasted Red Pepper Veggie Sub, My Way
Delicious sub sandwich, perfect crowd pleaser.
Ingredients
- Breaded Chicken cutlets, prepared your favorite way
- Roasted Red peppers, you roast them and marinate them in olive oil and sliced garlic.(see my key ingredient card, red roasted peppers, my way)
- 3 zucchinis sliced
- 1 garlic clove, minced
- Freshly sliced FRESH mozzarella cheese
- 1/2 red onion sliced
- olive oil
- salt
- pepper
- Crusty fresh bread
Preparation
Step 1
Prepare your zucchini/red onion mixture by cooking the zucchini, onions, garlic, and 2 tablespoons olive oil in a large sauté pan over medium heat for 10 minutes until the zucchini is tender. Season with salt and pepper.
Now cut open your fresh bread. Drizzle some olive oil, balsamic vinegar, and freshly grated parmesan cheese over the sides of the bread, BOTH sides.
Layer in the following order. Chciken cutlets on bottom, layer of roasted red peppers, layer of fresh mozzarella cheese, layer of zucchini and onions. Sometimes I add a layer of roasted eggplant, this time I didnt.
Now add a few spoonfuls of the olive oil that your red peppers were marinating in to the bread. TRUST me do this. Sprinkle it over. Generously.
Wrap up your sub in foil. Refrigerate or not till ready to serve. I opt not to or at least remove a coupla hours before.
Cut into slices and serve. Oh, its good.
