Red Pepper Rouille and Shrimp Toast

Ingredients

  • 2 Garlic Cloves
  • 1/2 tsp Cayenne Pepper
  • 1/8 tsp crumbled saffron threads
  • 1/2 cup Roasted Red Peppers
  • 2 tsp red wine vinegar
  • 1/2 cup mayo
  • 24 uncooked shrimp, peeled and deveined
  • Sourdough baguette

Preparation

Step 1

Blend cayenne, saffron, mayo, red peppers, garlic, vinegar in blender until smooth

Turn oven on broil.
Slice baguette and coat one side with sauce/mixture place in oven and toast (careful burns easily)

Saute shrimp with remaining sauce/mixture until done on med-low heat.

Place on top of toasted baguette and garnish with capers. Serve warm.
