Mediterranean-style Grilled Salmon

Ingredients
- 4 Tbsp chopped fresh basil
- 1 Tbsp chopped fresh parsley
- 1 Tbsp minced garlic
- 2 Tbsp lemon juice
- 4 salmon fillets, approx. 5 ounces each
- Cracked black pepper, to taste
- 4 thin slices lemon for garnishg

Prepare charcoal or gas grill, or broiler.
Away from grill, lightly coat grill rack or pan with cooking spray; position rack 4-6 inches from heat.
Combine basil, parsley, garlic and lemon juice. Spray the fish with cooking spray. Sprinkle with pepper. Top each fillet with an equal amount of the garlic-basil mixture.
Place fish herb-side down on grill. Grill over high heat, turning after edges turn white (3-4 minutes), placing on aluminum foil.
Reduce heat or move fish to cooler part of grill. Grill until fish is opaque throughout and an instant-read thermometer inserted into the thickest part of the fish reads 145 degrees (about 4 minutes longer). Remove salmon and place on warmed plates. Garnish with lemon slices.
