Tomato Sauce

  • 1/2 cup olive oil
  • 2 onions chopped
  • 2 garlic cloves chopped
  • 2 stalks celery chopped
  • 2 carrots peeled and chopped
  • 1/2 tsp salt
  • 1 tbsp. cayenne pepper
  • 1 tsp black pepper
  • 3 cans crushed tomatoes
  • 2 dried bay leaves
  • 1 tsp oregano
  • 1 tsp basil
  • 2 tbsps sugar



Step 1

In a large pot heat oil. Add onions and garlic and sauté until onions are translucent (about 10 minutes). Add the celery, carrots and 1/2 of the salt and peppers. Saute about 10 minutes. Add the tomatoes and bay leaves and oregano and basil and simmer uncovered on a low heat for 1 hour. Remove and discard bay leaves. Puree entire pot of sauce and return to stove. Add remaining spices and sugar and cook another 5 minutes.
