Oat Squares with White Chocolate Frosting

Ingredients

  • Base:
  • 1 cup (250g) butter
  • 3/4 cup (180g) light corn syrup (golden syrup)
  • 1/2 cup (100g) firmlay packed light brown sugar
  • 1 cup (150g) old fashioned rolled oats
  • 2/3 cup (100g) AP flour
  • 1/8 tsp salt
  • 1/2 cup (90g) currants
  • Frosting:
  • 5 oz (150g) whie chocolate, coarsely chopped

Preparation

Step 1

Base:
Preheat the oven to 325F. Butter a 9" (23cm) square baking pan.

Melt the butter with the corn syrup and brown sugar in a small saucepan until smooth. Mix the oats, flour, salt and currants in a large bowl.

Stir in the butter mixture. Spoon the mixture into the prepared pan, pressing down firmly.

Bake until lightly browned 25-30 mins. Let cool completely in the pan.

Frosting:
Melt the white chocolate in a double boiler over barely simmering water, use a thin metal spatula to spread the chocolate over the base. Let set, then cut into squares.
