Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1/4" cubes
- 1/2 cup pecans, chopped and toasted
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar, packed
- 1 teaspoon coconut extract
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup coconut, grated
Preparation
Step 1
In a large bowl, combine the potatoes, sugar, butter, coconut, pecans, and
cinnamon.
Cover; cook on Low for 6-8 hours.
Before serving stir in the coconut and vanilla extract.
