Ingredients
- 1/2 Chicken (backbone removed)
- 2 tablespoons Ground Toasted Cumin
- 1 tablespoon Ground Toasted Coriander
- 1 tablespoon Granulated Garlic
- 1 tablespoon Dried Oregano
- 1 teaspoon All-Spice
- 1 tablespoon Crushed Aleppo Pepper
- 2 tablespoons Kosher Salt
- 1/4 cup Olive Oil
Preparation
Step 1
Preheat oven to 400°F.
Use a mortar and pestle to combine the spices with the Olive Oil to form a paste. Rub the paste evenly onto the Chicken.
Place the Chicken on a baking sheet, skin side down. Roast for about 15 minutes. Flip the bird skin-side-up and continue to roast for 30 more minutes or until the internal temperature of the Chicken reaches 160°F.
Let the Chicken rest for 10 minutes then slice and serve.
Note: The spice rub can be used to season a whole Chicken
