Peking Roast

Originally from Heloise in 1962. "My name for it is 'Peking Roast'. It is cooked in coffee. It is terrific. It is not necessary to use an expensive cut of meat to make this recipe. For the roast you may select any cut of beef.

Takes days to prep and 4-6 hours to simmer!

Ingredients

  • 3-5 pounds of beef
  • garlic slivers
  • 1 C vinegar
  • 2 C strong, brewed, black coffee
  • 2 C water
  • salt and pepper to taste

Preparation

Step 1

1. Use a large knife to cut slits completely through the meat.
2. Insert slivers of garlic down into the slits.
3. Pour vinegar over the meat making sure it runs down into the slits.
4. Refrigerate 24-48 hours.
5. When ready to cook, place in big, heavy pot, and brown in oil until nearly burned on all sides.
6. Pour strong, brewed coffee over meat.
7. Add water and cover.
8. Simmer 4-6 hours on top of stove.
9. Season with salt and pepper 20 minutes before serving time.
10. As roast cooks, it is okay to add a little water if needed, but never more than 1 C at a time.
