Salsa Beef Salad

Ingredients

  • 1 pound ground beef
  • 1 can (15 1/2 ounces) pinto beans, rinced and drained
  • 2 jalapeno peppers seeded and chopped
  • 2 tablespoons chili powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper
  • 1 head iceberg lettuce, shredded
  • 2 medium tomatoes, diced
  • 1/2 shredded Pepper Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chopped green onions
  • 1 cup salsa
  • juice of 1 lime
  • 1 package ( 12 ounces) corn tortilla chips, brocken
  • sour cream (optional)

Preparation

Step 1

1. Brown ground beef in a large skillet over medium-heat, stirring to separate meat. Drain and dicard fat. Addd beans, jalapeno, chili powder and cumin; season with salt and pepper. Cook and stir 15 minutes. Set aside to cool.
2. Toss together lettuce, tomatoes,cheese and cilantro in large salad bowl. Top with ground beef mixture, green onions, salsa and lime juice. Sprinkle with corn chips. Serve with sour cream, if desired
