Balsamic Braised Beef

Ingredients

  • 4 oz pancetta diced
  • 1 bone in beef chuck roast - 5 pounds, trimmed, salt and peppered
  • 2 cups chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 5 cloves garlic
  • 1 TBSP mustard seed
  • 2 TBSP tomato paste
  • 1/2 cup dry red wine
  • 1 1/2 cups balsamic vinegar
  • 2 dried bay leaves
  • 3 sprigs fresh rosemary
  • 2 TBSP honey
  • 1 TBSP unsalted butter
  • t tsp flour

Preparation

Step 1

Cook pancetta in saute pan until crisp. Transfer to paper towel. Reserve drippings.
Sear roast in drippings in same pan. Brown on all sides.
Put into large crock pot.
Saute onions, carrots, celery, garlic and seeds in same pan until liquid releases. Stir in tomato paste and cook until it begins to carmelize.
Deglaze pan with wine. Cook until wine is mostly evaporated.
Transfer to the crock pot.
Add vinegar, bay leaves, Rosemary, and honey to crock pot.
Cover and cook for about 5 hours on high.
Transfer the meat to a cutting board.
Strain liquids, put in sauce pan, reduce to 1 1/4 cup.
Wisk in butter and flour.
Serve with meat.
