Ingredients
- 1/3 c. butter, diced in cubes
- 1 tbsp. onion powder
- 1 large clove garlic, minced
- 1/4 tsp. thyme
- 1/3 c. flour
- 3 c. milk
- 2 c. vegetable broth
- 1/2 c. heavy cream
- 3 c. finely chopped broccoli
- 6 oz. sharp cheddar cheese, grated
- 1 oz. Parmesan cheese, grated
- salt
- pepper
Preparation
Step 1
Melt butter in a medium saucepan over medium high heat. Add onion powder and cook, stirring frequently until soft, about three minutes. Add in garlic, thyme, and flour and cook for about 1 minute more, stirring constantly.
While whisking, slowly pour in the milk, vegetable broth, and then the cream. Cook, stirring frequently, just until mixture begins to gently bubble, then reduce heat to medium low and add in the broccoli. Cook until the broccoli is tender, about 6-8 minutes, stirring frequently.
Turn off the heat. Add in cheese and stir until melted, then season with salt and pepper to taste.
