Ingredients

  • 1 loaf french bread
  • 1 lb ground beef
  • 1 medium zucchini
  • 3 oz tomato paste
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups mozzarella, shredded
  • 1/2 cup parmesan, shredded
  • fresh thyme

Preparation

Step 1


Preheat a large skillet and brown the meat.

Add the onions and garlic and saute for a minute. Cut the zucchini into cubes and add the meat mixture. Cook until vegetables are softened, about 5 minutes.

Mix in tomato paste with the back of a spoon. Season with red pepper flakes (more than 1/4 tsp if desired) and salt and pepper.

While the mixture continues to cook slice the french bread in half, length-wise. Use your fingers to slightly gut the bread making them look like little boats. Broil in the oven until slightly browned and crisp. Watch it closely so it doesn't burn, it should only take a few minutes.

Spoon the meat mixture into the french bread boats. Top with cheese and sprinkle with fresh thyme if you have some.

Bake at 350° for 10 minutes or until the cheese is melted.

Slice and serve immediately.
