Ingredients
- 1 c. granulated sugar
- 1 1/2 c. water
- 3 tbsp. cornstarch
- 1 lemon
- 2 egg yolks
- 2 egg whites
- 1/4 c. sugar
Preparation
Step 1
Boil the sugar, water and cornstarch until thick. Add lemon juice and rind of the lemon. Then add 2 well beaten egg yolks. Cool slightly. Pour into a baked crust. Beat the egg whites and add the sugar. Beat until firm. Top with meringue and brown at 450 F. Watch closely. If you desire more meringue, for each egg white add 2 tbsp. of sugar.
MAKE SURE THAT THE MERINGUE TOUCHES THE PIE CRUST EVERYWHERE AND THAT THERE IS NO FILLING SHOWING.
