Ingredients
- 1 cup chopped, peeled, and seeded plum tomatoes
- 1/2 cup snipped fresh basil
- 1 Tbsp olive oil
- 2 tsp minced garlic
- 1/4 tsp salt and freshly ground black pepper
- 1/4 cup butter, softened
- 1 tsp minced garlic
- 1/4 tsp salt and 1/4 tsp ground black pepper
- 1 16oz loaf baguette style french bread (about 20-24 inches long),
- diagonally sliced 3/4 inch thick
- 1/2 cup freshly shredded parmesan or romano cheese
Preparation
Step 1
For topping, combine tomatoes, basil, olive oil, 2 tsp minced garlic, 1/4 tsp salt and 1/4 tsp freshly ground black pepper in a medium bowl.
For garlic butter, combine softened butter, 2 tsp garlic, 1/4 tsp salt and 1/4 tsp black pepper in a small bowl.
Evenly spread garlic on one side of each bread slice. Preheat an indoor grill. Place bread slices, buttered sides down, on the grill rack. If using a covered grill, close lid. Grill for 2 minutes or until lightly browned. Turn over and spoon some of the topping onto each bread slice. Sprinkle with cheese. Grill, covered 3-4 minutes more or just until heated thru and toasted. Remove from grill - serve immediately.
