  • 5 Medium Sweet Potatoes
  • 5 Medium Tart Apples, peeled and thinly sliced
  • 1/2 Cup Sugar
  • 1 tsp. Cornstarch
  • 1/4 tsp. Cinnamon
  • 1/8 tsp. Salt
  • 1 Cup Cold Water
  • 1 tsp. Lemon Juice
  • 1/4 Cup Butter, cubed
  • 1 tsp. Cinnamon
  • 1/4 Cup Butter
  • 1/4 Cup Flour
  • 1/4 Cup Oatmeal

Preparation

Step 1

Cook sweet potatoes until tender. Cool and peel sweet potatoes. Cut into 1/4" slices. Place slices into a 3 x 9 inch baking dish; layer apples and potatoes. Repeat layering, then, in a small saucepan, combine sugar and rest of ingredients, except butter; bring to a boil. Cook until thickened. Remove, stir in butter until melted. Pour over potatoes and apples. Cover and bake for 30 minutes. Topping: combine. Crumble over potatoes, Bake uncovered for 10 minutes or until fluffy.
