Ingredients

  • 3 to 4 pound beef roast
  • 2 pkg dry onion soup mix
  • 2 t. oregano
  • 4 cans beef broth (or more)
  • 2.5 t. garlic powder
  • 1 t. anise seed
  • 1 t. sweet basil
  • 2 t. dry parsley
  • Dash of pepper

Step 1

Double as it freezes well. Use a pad with a tight cover or use slow cooker. Don't overcook or it won't slice well - 300 degrees for 2-3 hours.

Mix all the dry ingredients together. Put half on top of the roast. Flip over and put the rest on the other side.

Put 2 cans of beef broth in the pan, but leave the spices on the meat. When time is up, remove meat from the pan and refrigerate right away, covering well.

Refrigerate the juices with the seasonings in it. You will probably have to add more broth. You can use some water, but keep the juices nice and rich. Add the extra juice just before reheating and then you can see how much you need. When juice is cooled you can remove any grease that has hardened on the top.

When using fresh herbs, need to use more. Serve with hot pepper rings.
