Ingredients
- 2 celery ribs, chopped
- 1 med. onion, chopped
- 1 med. green pepper, chopped
- 1 med. carrot, chopped
- 2 Tbsp. olive oil
- 1/4 c. flour
- 1 c. chicken broth
- 1 lb. smoked kielbasa or Polish sausage, cut into pieces
- 1 can diced tomatoes, undrained
- 2 tsp. dried oregano
- 2 tsp. dried thyme
- 1/8 tsp. cayenne pepper
- Hot cooked rice
Preparation
Step 1
In lg. skillet, saute the celery, onion, pepper, and carrot in oil until tender. Stir in the flour until blended; gradually add broth. Bring to a boil. Cook and stir for 2 minutes or until thickened.
Transfer to a 3 qt. slow cooker. Stir in the sausage, tomatoes, oregano, thyme and cayenne. Cover and cook on low for 4-5 hours or until heated thru. Serve with rice.
