Peach Shortbread (Kuchen)

A doctor invented this delicious recipe and it was published in Ladies Home Journal. Mom read it and tried it and now it's a family classic.

Ingredients

  • 2 cups flour
  • 1/4 teasp. baking powder
  • 1/2 teasp. salt
  • 1 cup sugar, minus 2 Tbsp. for crust
  • 1/2 cup butter
  • 12 peach halves
  • 1 teasp. cinnamon
  • 2 egg yolks
  • 1 cup heavy cream

Preparation

Step 1

Sift: flour, baking powder, salt and 2 Tbsp. sugar.

Cut in butter.

Pat in 8 inch pyrex square pan and press bottom and 1/2 way up sides

Sprinkle with cinnamon and sugar mixture and bake 350 degrees for 15 mins.

Then pour over mixture of slightly beaten egg yolks and heavy cream

Continue to bake 30 more mins.
