Ingredients

  • First Layer:
  • 1 1/2 Cups Flour
  • 1/2 Cup Butter
  • 1/3 Cup Nuts
  • Second Layer:
  • 8 oz. Cream Cheese
  • 1 Cup Powdered Sugar
  • 1 Cup (or more) Cool Whip
  • Third Layer:
  • 2 Cups Milk
  • 1 1/4 Cup Sugar
  • 1/3 Cup Cornstarch
  • 3 Egg Yolks
  • 1/3 Cup Lemon Juice
  • 2 tsp. Lemon Rind
  • 1/2 tsp. Salt
  • 1 Tbs. Butter

Preparation

Step 1

Mix first layer ingredients and press into baking dish. Bake at 350 degrees for 15 minutes. Cool. Mix second layer ingredients and pour over crust. Chill.
Heat milk and sugar. Mix together cornstarch, egg yolks, lemon juice, and rind and also enough water to make a paste. Add to hot milk and bring to a boil. Add salt and butter. Cool slightly and pour over cream cheese layer. Cool in refrigerator before serving.
