Ingredients
- 1/2 c butter, softened
- 1 c sugar
- 2 eggs
- 2/3 c full-fat unsweetened yogurt
- 5 Tbsp milk
- 2 c flour
- 1 tsp baking soda
- 6 oz chocolate chips
Preparation
Step 1
Beat butter and sugar until light and fluffy. Add the eggs, yogurt and milk. Mix until combined. Mix flour and baking soda together and then add to the wet ingredient mixture. Stir just until blended. Stir in the chocolate chips and then spoon into a greased or lined muffin pan. Bake in a preheated oven at 375 for light pans, or 350 for dark pans, for 25 minutes.
Variations: Add 1/3 cup cocoa and replace chocolate chips with peanut butter chips
Add 1/3-1/2 cup ground flax seed to get some omega fatty acids in there.
We prefer to make mini muffins. Bake these for 10 minutes.
