No Bean Pumpkin Hummus

I promise this hummus will amaze you! It’s creamy, delicious and has just an ever so slight hint of pumpkin, not the overwhelming blast in your mouth. I was worried the texture wouldn’t be the same as the beamy hummus, but this has the exact same texture as the real deal. Truth is I actually like this more than the chickpea kind.

Ingredients

  • 1 medium zucchini peeled & chopped into 1 inch pieces
  • 1/4 cup tahini
  • 3/4 cup pumpkin puree
  • 2 tbsp extra virgin olive oil
  • juice of 1 lemon
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1 tsp garlic powder

Preparation

Step 1

Place all ingredients in a food processor
Mix until smooth & the mix has a thick texture

This makes a lot! 16 servings @ 2 tablespoons per serving
