Crispy Almond Chicken

Ingredients

  • 2/3 c sliced almonds
  • Butter
  • 3 boneless chicken breasts,pounded 1⁄4” thick
  • 1 1⁄2 c whipping cream
  • 2 T orange marmalade
  • 1 T Dijon mustard
  • 1/8 t red pepper
  • 1 ⁄4 c mayo
  • steamed rice

Preparation

Step 1

Sauté almonds in butter. Set aside. Sauté chicken in butter on both sides for 1 min, until browned. Reduce heat to med. In a bowl, whisk cream, mustard, marmalade, pepper and mayo. Add 1⁄2 c almonds. Pour over chicken and cook for 10 min until thick. Sprinkle with rest of almonds. Serve over steamed rice.
