All-in-One Breakfast "Cupcakes"

Ingredients

  • 1/2 of a 30 oz. bag of frozen hash browns
  • 2 T vegetable oil
  • 1/2 t salt
  • 1/2 t pepper
  • 10 eggs, lightly beaten
  • 4 T milk
  • 3/4 cup cooked and crumbled bacon
  • 3/4 cup grated cheddar cheese
  • 3/4 cup chopped fresh spinach

Preparation

Step 1

Preheat oven to 400. Grease a muffin tin (bottom and sides). Place tin in oven so it starts out warm.

Mix hash browns, oil and salt and pepper. Remove muffin tin from oven and divide hash brown mix among the 12 muffin cups. Bake for 35-40 minutes until golden brown.

Meanwhile, mix eggs, milk, bacon, cheese and spinach in a large bowl. Divide and pour evenly over cooked hash browns. Bake for 10-13 minutes or until eggs are fluffy and cooked through. Let them cool a few minutes and enjoy!

PS. You can make these and freeze them; just reheat in oven at 350 or so until thawed and heated through.
