Potatoes - Golden Potato Gratin

Ingredients

  • 1 large onion, sliced
  • 1 small red pepper, diced
  • 1 Tbsp. chopped fresh sage
  • 1 clove garlic, chopped
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 2 cups heavy cream
  • 1 bay leaf
  • 1 bag(28 oz) small white potatoes, thinly sliced

Preparation

Step 1

Heat oven to 350 degrees. In pot over medium-low heat, cook onions, peppers, sage and chopped garlic in butter 20 minutes or until onions are golden brown, stirring occasionally.

Stir in flour., Transfer onion mixture to bowl; set aside. In same pot oven medium heat, simmer heavy cream, bay leaf and sliced potatoes 10 minutes, stirring occasionally. remove from heat; discard bay leaf.

Stir in onion mixture. Season with salt and pepper. Spoon potato mixture into greased 9" round casserole dish, arranging potato slices, if desired.

Place casserole dish on baking sheet; cover with foil. Bake 30 minutes. Remove foil. Bake 15 minutes more or until golden brown and potatoes are tender.
