Ingredients
- 2 tablespoons flour
- 2 tablespoons oats
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon butter
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup sugar
- 3 tablespoons nonfat vanilla yogurt
- 1 tablespoon canola oil
- 1 teaspoon vanilla
- 1/2 cup milk
- 1/2 teaspoon lemon zest
- 1 1/2 cups blueberries
Preparation
Step 1
1. Mix flour-cinnamon. Cut in butter.
2. Heat oven to 400.
3. Whisk flour-salt. Mix egg-vanilla. Beat well. Beat in milk and flour, alternating, ending with milk. Add zest and berries. Pour into sprayed muffin cups. Top with topping.
4. Bake 17-20 mins.
Notes: Fruit can be frozen, mixed berries good too.
