Ingredients
- 3/4 cup light coconut milk (reserve 2 Tablespoons)
- 1 1/2 cups water
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1 cup basmati rice
- 1/2 teaspoon dried basil, or 2 teaspoons fresh
Preparation
Step 1
1. Bring coconut milk (reserve 2 tablespoons), water, garlic, and salt to a boil. Add rice. Simmer uncovered for 20 minutes.
2. When rice is done, stir in reserved coconut milk and basil.
Notes: This was great and really very easy. Used brown rice and didn't use the coconut milk at the end or the basil (forgot).
