Ingredients

  • 2 cakes compressed yeast
  • 1 c warm water
  • 4 1/2 c flour
  • 1/2 c sugar
  • 1/2 c butter, softened
  • 3 eggs
  • 1 tsp salt
  • 2 tsp grated lemon rind
  • 1/4 candied (or dried) fruit
  • 1/4 c raisins
  • 1/2 c nuts, chopped
  • Melted butter

Preparation

Step 1

Dissolve yeast in water for 10 minutes.

Stir in one c of flour.

Cover and let rise in a warm place until double in size.

In a separate bowl, gradually add sugar to butter and beat until creamy.

Beat in eggs one at a time.

Add salt and lemon rind.

Beat the risen "sponge" of dough into this mixture.

Gradually add 3 1/2 c flour and beat for five minutes.

Add fruit, raisins, and nuts.

Cover bowl with a cloth and let dough rise for 2 hours, until double in size.

Divide dough in half and place each half in greased tube pan.

Let dough rise again for 1/2 hour.

Brush tops with melted butter.

Bake at 350 degrees for about 1/2 hour. (cut in half for bread machine).
