Artichoke Salad

  • 1 package chicken Rice-A-Roni
  • 5 green onions - chopped
  • 1/2 medium bell pepper - chopped
  • 1/4 teaspoon curry powder
  • 1/2 cup mayo
  • 2 jars marinated artichoke hearts

Step 1

Make Rice-A-Roni according to package directions, OMITTING the BUTTER. Allow to cool completely.

Add onion & bell pepper.

Drain artichokes. Save the artichoke juice.

Add mayo & curry powder to the artichoke juice. Stir well.

Combine rice & artichokes to the juice mixture.

Refrigerate. Best if made day ahead of time.
