Ingredients

  • Roll -

  • 3

    eggs

  • 1

    C Sugar

  • C Pumpkin

  • ¾

    C Flour

  • 1

    tsp Baking Powder

  • 2

    tsp Cinnamon

  • ½

    tsp nutmeg

  • 1

    tsp ginger

  • 1

    C Chopped Nuts (Optional)

  • Cream Cheese Filling -

  • 1

    8oz Cream Cheese

  • 4

    Tbs Butter

  • ½

    tsp vanilla flavoring

  • 1

    C powdered Suger

Directions

Beat eggs in bowl for 1 min. Gradually sprinkle sugar and beat 4 mins. Stir and add pumpkin. Combine flour and all dry ingredients and add flour mixture to egg mixture. Beat one minute. Line Baking sheet with wax paper and then grease. Pour mix into pan. Bake 375 degrees 12-15 minutes. Immediately turn onto a towel sprinkled with powdered sugar. Remove wax paaper and roll cake and towel together. Cool COMPLETELY. When cool, unroll and spread with cream cheese fililng. Re-roll and sprinkle with sugar
