Roasted Peppers

Ingredients

  • 8 peppers
  • 8 tbsp olive oil
  • 2 cloves garlic, crushed
  • salt and pepper
  • 1 tbsp balsamic vinegar
  • 2 tsp parsley

Preparation

Step 1

Half and seed the peppers.
Brush with olive oil and roast at 500 F until browned
Place in paper bag and steam for 10 -15 minutes.
Peel and cut into strips

Mix remaining ingredients.
Marinate until flavours are absorbed.
