Couscous with Mushrooms and Scallion

Ingredients

  • 4 cups sliced mushroom
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1 1/4 cups nonfat chicken broth
  • 1/2 teaspoon oregano
  • 1/8 teaspoon pepper
  • 1 cup couscous
  • 1/4 cup minced scallion

Preparation

Step 1

1. Saute mushroom and garlic in oil 5 mins.

2. Add broth and pepper. Bring to boil. Add couscous and onion. Cover and take off heat. Let stand 5 mins.

Notes: Very good - repeater.
