Ham & Asparagus Crepes

Ingredients

  • Crepes:
  • 1 cup milk
  • 3 eggs
  • 2/3 cup flour
  • Filling:
  • 12 thin slices Black Forest ham
  • 4 slices Muenster cheese, cut in thirds
  • 3 (16 oz) cans asparagus
  • Cheese sauce:
  • 3 tbsp melted butter
  • 3 tbsp flour
  • 1 cup milk
  • 1 cup grated sharp Cheddar cheese
  • Dash of white pepper
  • Paprika
  • Salt to taste

Preparation

Step 1

To make crepes, mix milk, eggs, and flour in blender. Heat 8-inch pan to medium-high. Pour batter in pan and roll around to cover pan thinly. Cook until bubbles appear and edges start to turn brown. Flip and cook other side a few seconds. Repeat 12 times.

Preheat oven to 325 degrees. Lay crepes flat. Place thin slice of ham, 1/3 slice of cheese, and 2-3 asparagus spears in each crepe. Toll up crepe and place in 9x13 baking dish. Cover with foil. Bake for 30 minutes. Brown the last few minutes. Serve two on plate with cheese sauce.

To make cheese sauce, microwave butter, flour and milk and whip with tire wish until smooth. Add cheese and white pepper, salt if needed. Spoon 2-3 tbsp sauce over each crepe and decorate with paprika.
