Bean & Ham Hock Soup (Underwood Recipe)

REMINDER: Need to soak the beans the evening before

Ingredients

  • Small bone-in ham shank, cut into 2-3 pieces (freeze part you don't use)
  • Don't use the pre-cut ham cubes - they don't have the fat for flavor
  • Hurst Great Northern Beans (comes with little seasoning packet)
  • 1/2 tsp baking soda or powdered ginger
  • small onion, minced
  • potatoes
  • water

Preparation

Step 1

Put beans in a 3-4 quart pot to soak, add twice as much water to cover beans, add 1/2 tsp baking soda (this takes a little gas out of the beans) or powdered ginger and stir. Let soak overnight. Following morning, take beans out of water to leave any dirt-sand behind. Put ham in 4-6 quart to cook with half again as much water as required to cover beans - more water may be required as you keep a low water boil for 2-3 hours. Add small minced onion early. In last hour add potatoes.
