Basil & Four-Cheese Barley Pilaf

Ingredients

  • 2 tsp. oil
  • 1 onion, finely chopped
  • 2 stalks celery, finely chopped
  • 2-1/2 cups 25%-less-sodium chicken broth
  • 1 cup pearl barley, uncooked
  • 1/2 cup Kraft 4 Cheese Italiano Light Shredded Cheese
  • 1/4 cup fresh basil, thinly sliced

Preparation

Step 1

Heat oil in large saucepan on medium-high heat. Add vegetables; cook and stir 5 to 7 min. or until crisp-tender.

Stir in broth and barley; bring to boil. Simmer on medium-low heat 40 min. or until barley is tender and liquid is absorbed, stirring occasionally. Remove from heat.

Add cheese and basil; stir until cheese is melted and mixture is well blended.
