Ingredients

  • 2 large onions
  • 2 cloves garlic, minced
  • 1/3 c olive oil
  • 15 large tomatoes, peeled and cut into 1/8's
  • 2 c red wine
  • 12-oz tomato paste
  • 1 1/2 tsp salt
  • 1 tsp rosemary, crushed
  • 1/4 tsp pepper
  • 1 sweet red pepper, chopped
  • 2 heaping tsp dried oregano

Preparation

Step 1

Saute onions, garlic and olive oil until golden (about 10 minutes) in a large kettle.

Add tomatoes to the kettle and stir.

Add remaining ingredients and bring to a boil.

Simmer for an hour or so uncovered.

Freeze in small containers.
