Ingredients
- 1 pound cheddar cheese -- grated
- 3 cups all purpose flour
- 1 cup butter -- at room temperature
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 cup pecans -- chopped
Preparation
Step 1
1. Beat first 5 ingredients with electric mixer until well combined.
2. Mix in pecans.
3. Divide dough into thirds.
4. Form each into smooth 1 1/2 inch-inch diameter log on sheet of waxed paper. Wrap tightly.
5. Refrigerate at least 1 hour to firm. (Can be prepared ahead and refrigerated 3 days, or frozen several months. Thaw in refrigerator before continuing.)
6.Preheat oven to 325 deg. Remove paper from dough.
7. Cut dough into 1/4 inch thick-inch-thick slices.
8. Arrange 1 1/2 inches apart on baking sheets.
9. Bake until golden brown, 15 to 18 minutes.
10. Transfer to paper towels and cool completely.
11. Store in airtight container.
